Food Friday: Lightened Up Confectionary Popcorn Recipe

This popcorn is what dreams are made of. And I don’t even like popcorn (usually).

I am SUCH a fan of the flavored popcorn you can find around Walt Disney World (I usually purchase mine on Main Street at the Confectionary) that I decided to do a lightened up version so that I can enjoy it, guilt-free, at home.

The caramel part is not necessary for me when I’m just chilling at home, but the chocolate part IS. Caramel=vacation goodness and chocolate, well when is chocolate-especially healthy dark chocolate-not necessary?! It’s a staple for me! So I decided to create a dark chocolate drizzled popcorn that was just the right amount of indulgent for me!

 

What you’ll need:

Freshly popped popcorn-kettle or plain

High Quality Dark Chocolate

Coconut Oil

Sea Salt

Lay out the fresh popped popcorn on parchment paper topped tray. Melt a half cup of dark chocolate with a tiny dash of coconut oil-either in the microwave or double boiler. Just make sure you dish you place the chocolate and coconut oil in is microwave friendly. Microwave in increments of 15-30 seconds, depending on your microwave’s settings. Once you have the melted chocolate, place this in a plastic baggie and cut the side off, turning it into a DIY frosting bag. Drizzle the chocolate on top of the popcorn, and then sprinkle a dash of sea salt, so that it sticks to the chocolate. Let cool for at least a half hour, then enjoy!

This is really the perfect healthy snack! For sweet and salty lovers like me, this will do the trick. Of course, you can customize this popcorn snack to your liking! Adding in a bit of brown sugar and butter and popping it in the oven will create that signature caramel corn flavor. 😉 Then, you can add the chocolatey goodness to that! For the 4th, I’d even add some red, white, and blue sprinkles to the mix! Bringing that along to your cookout would definitely make you the favorite child/cousin/etc. 🙂

Another one of my all time favorite popcorn snacks is popcorn, peanuts, and M&Ms. There is no baking or even microwaving included in that snack-it’s so quick and easy, not to mention super yummy!
